With 4 stars in the Eichelmann wine guide, Matthias Höfflin is among the best winemakers in Germany. The pillars of his philosophy of wine making are spontaneous fermentation, pristine production of the wine over generous amounts of time, and bottling without filtration.
Matthias's parents are pioneers of organic farming on Germany’s Kaiserstuhl. Their guiding thought, to improve what is already good, still spurs us on today. As a result, biodiversity has been restored to the vineyard. "The vineyards footprint is the best cellar master", is the winemakers credo.
The result is complex wines with many layers of flavour, constantly evolving in your mouth long after the liquid has gone.
